Spiced Apple Cake Recipe

Cake Ingredients:
300g self-raising flour
1 ½ tsp ground cinnamon
300g + 50g unsalted butter
300g light brown sugar
6 medium eggs
500g (peeled & cored weight) chopped apples (any type of apple will work with this recipe!)
Icing Ingredients:
140g softened butter
280g icing sugar
1-2 tbsp of milk
¼ tsp vanilla essence
Instructions:
Preheat oven to 350°F (175°C). Grease a 9-inch (23 cm) round or square (3-inch deep) cake tin or a 9x12 inch (22.5 30cm) tray bake tin or alternatively line it with parchment paper.
Soak the chopped apples: In a small bowl take the 50g of light brown sugar and mix in with the apples until all the apple is covered in sugar. Set to one side.
Whisk dry ingredients: In a medium bowl, combine flour, cinnamon.
Mix wet ingredients: In a large bowl, whisk together butter, light brown sugar and eggs, until smooth.
Combine: Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
Fold in apples: Take a wooden spoon and fold in the apple mixture.
Pour into prepared pan and spread evenly.
Bake for 40–50 minutes, or until a cake tester inserted into the centre comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
To make the icing: In a large bowl add the soft butter, icing sugar and vanilla essence. Beat whilst slowly adding the milk (sometimes not all the milk is necessary required) until smooth and creamy. Either use a piping bag to pipe a design for the top or just spread on top of the cake maybe adding a few dried apples & caramel sauce for decoration (if you have them!).
